Maria Martinez moves finished pans of bread from racks into holding cupboards at La Favorita Bakery in Immokalee, Fla., Friday morning. Bakers starts work at 7 p.m. with a second shift of workers coming in the middle of the night to finish the baked goods and serving customers when the store opens at 4 a.m.
